After several tests, I finally found the right amounts to make these vegan cookies, ultra-extra-delicious !!! The recipe is simple … ..!
Makes about 40 cookies diameter of 3 cm.
1) Coconut oil 200ml
2) flour hazelnuts 120 g (I used chopped hazelnuts , I had frozen, obtained from the extractor after the hazelnut milk )
3) Flour bio wheat, type 0, g 120
4) Sugar cane crude 75 g
5) Limoncello (or liqueur to taste) 125 ml
6) A packet of whole yeast
7) A pinch of salt
8) Cocoa g. 70
Combine first liquid parts, so the coconut oil and limoncello, and mix them well. Then mix the dry parts together, then the flour, sugar, cocoa, baking powder, pinch of salt, and the noccole grain . Add to the liquid, mixed, the solid mixture, a little at a time. You will get a consistency as if it were a pastry, but very soft.
