This is a variation on “spagopatata” for those who had not -spagatutto-, and is also a version that “use” less oil ….!
-Potatoes at will!
– extra virgin olive oil, garlic, salt and pepper
- Grate the potatoes, with the normal grater, then rinse and dry.
2 . Fry the garlic in the oil, not to high flame ..
3 . … and pour in the matches potato skillet. Give the shape you prefer, square, rectangular, round, ….
4 . … and fry very well, until it forms a crust … ..! Then if you want you can, with a kitchen scissors, cut into four and get pieces of paper, turn them and brown the other side.
Serve hot with pepper and lemon, or use the sheets as the sheets of potatoes from garnish to taste!
